Amanda Mikels
Vice Chair
Amanda Mikels has over two decades of experience in account management, customer success, and strategic account development. She recently pivoted to focus on sustainable food systems. She founded Summer’s Bounty 365, a consulting firm dedicated to reducing household food waste through accessible, empowering, and culturally relevant education and solutions.
She has an MPS in Sustainable Food Systems from the Culinary Institute of America, where she now works as a Graduate Teaching Assistant for the same program. She is also an Open Buffalo Emerging Leader and a Cooperative Changemaker with Cooperation Buffalo. She is a member of the global community, The Circular Economists, comprised of people committed to advocating for solutions that reduce, reuse, and regenerate our resources, leaving a smaller footprint on our planet.
She is the proud stepmother of three wonderful boys, supports her partner in his love of cycling crazy distances, has an unapologetic, co-dependent relationship with her dog, Mable Pancakes, and has dabbled in permaculture concepts in her own yard, but has a lot of work to do to achieve these goals.
